The chef works with local producers to guarantee the quality of the products, the fruits and vegetables come partly from the vegetable garden. We promote short circuits for meat: lamb from Sisteron, pork from the Hautes Alpes, freshwater fish: trout from the Ecrins de Chateauroux des Alpes, snails from Valensoles, cheeses and faisselles from Chambeyron, homemade pastries: crème brûlée with lavender or violet, blueberry & raspberry tarts and ice creams, sorbets from Haute Savoie
On the menu, the local specialty: ravioles de Fours and its 7-hour leg of lamb from the region or à la carte: matured rib of beef accompanied by marrow bones, frogs' legs Provençal style in the pure French gastronomic tradition.
