Description
A delicious confection from Provence, our artisanal calisson is a blend of finely ground blanched almonds with candied melon, candied orange peel, and vanilla. After maturation, the paste is molded into its original shape on a wafer sheet and covered with royal icing, a mixture of egg white and icing sugar. It is then baked for a few minutes to cook the same icing. For optimal enjoyment, enjoy it within the first month after its production.
