Einkorn wheat has been part of the agricultural history of Haute-Provence for millennia. This hardy cereal adapts to the difficult conditions of its territory. It grows particularly well on poor, stony and infertile soils.
In the Alpes de Haute Provence, les champs de petit épeautre s’intègrent aux paysages agricoles. Ils côtoient notamment les célèbres champs de lavande. Ces cultures partagent les mêmes terres calcaires et le climat sec de la Provence.
Einkorn wheat requires little water. Its cultivation also relies on know-how passed down through generations. Producers thus contribute to preserving this traditional grain.
Small spelt from Haute-Provence PGI
The small spelt of Haute Provence benefits from a Protected Geographical Indication (PGI). This recognition guarantees its link to a specific geographical area and traditional know-how. The PGI has applied to the grain since 2010. A PGI also distinguishes the flour of small spelt of Haute Provence. It governs its production and processing according to a set of specifications.
The geographical production area covers four departments. It comprises 235 municipalities distributed among the Alpes de Haute Provence, the Hautes-Alpes, the Drôme and the Vaucluse.
This cereal grows between 400 and 1,300 meters above sea level, which highlights its adaptation to the mid-mountain landscapes of Haute-Provence.
Two PGIs for Small Spelt
The Petit Epeautre de Haute Provence has benefited from a Protected Geographical Indication (PGI) for the grain since 2010 as well as another PGI for the Petit Epeautre flour from Haute Provence.
A recognizable grain and authentic flavors
Einkorn wheat is distinguished by its grain, which requires a hulling step before consumption. Once prepared, the grain can be eaten like a cereal.
It pairs easily with many recipes, both savory and sweet. You can find it in local cuisine, in tabbouleh or risotto, and discover another facet of the flavors of Haute-Provence. A substitute for rice, pasta, or wheat, this grain will win you over with its ease of preparation.
