The olive tree embodies Mediterranean identity; it is an emblematic tree of the region. It thrives in the Alpes de Haute Provence. From Manosque to Oraison, from the Pays de Forcalquier to Les Mées, it can also be found near Sisteron, the natural limit of its cultivation. You will also see it in the Verdon region as far as Entrevaux. Some specimens, several centuries old, tell the story of the area.

The olive harvest, known as "olivades," begins after the first frosts. It generally extends from November to February. Two methods coexist, combining tradition and modernity.
On one hand, there's manual harvesting with combs and nets. On the other, faster mechanized techniques. However, tradition remains deeply rooted. It transforms each harvest into a moment of sharing.
Olive harvests are not just agricultural events. They become a true celebration. Families and friends gather around the trees. After the hard work, it's time for some comfort. An aioli (a Provençal dish made with mayonnaise, garlic, boiled vegetables, and salt cod) brings everyone together around typical Provençal flavors.
The harvests from the best-maintained olive groves yield between 20 and 30 kg of olives per tree.

The olive oils from Haute-Provence are particularly fruity. They owe this quality to a terroir conducive to traditional blending, from a variety: the Aglandau.
This oil expresses specific aromas: artichoke, pear, cut grass, which characterize it from one valley to another! The result always remains balanced and intense.
