The cheese of Banon fait partie des spécialités incontournables des Alpes de Haute Provence. Il trouve ses origines dans le village of Banon, niché entre la montagne de Lure et le mont Ventoux. Élaboré exclusivement avec du lait cru entier de chèvre, il révèle toute la richesse du terroir de Haute-Provence.
Its unique characteristic lies in its maturation process. Each cheese is wrapped in brown chestnut leaves and then delicately tied with a strand of natural raffia. This traditional method imparts subtle aromas and a melting texture highly prized by cheese lovers.
Recognizable by its smooth texture and vegetal notes, the Banon It offers a harmonious balance between mildness and character. Its manufacturing process is based on the "soft curd" technique, passed down through generations. Since 2003, it has benefited from a Protected Designation of Origin (PDO), now known as an Appellation d'Origine Contrôlée (AOC)..
